Super-busy, no time for real updates, life is too hectic.

But I had to gloat... today is my first day at my new job. And I'm HOME for lunch!! Whoo hooo! I love working this close to home!

I've misplaced your butternut squash kugel recipe, and we're having friends for dinner next Friday - one of them is allergic to white potatoes, so I thought this would be a great substitute. Plus it's GOOOOOOD.

If that doesn't work:

1 butternut squash, cut into large chunks
1 stick of margarine

1 cup flour
1 cup sugar
3 eggs
¼ cup non-dairy creamer

Mash the squash and margarine together. Add remaining ingredients to the mashed squash and mix until well blended.

Pour mixture into a baking dish and liberally sprinkle cinnamon over the top.

Bake for about an hour at 350 degrees F

Woo-hoo! Home for lunch is an excellent thing!

(for a brief time, I worked a 5-minute walk from home. I didn't take enough advantage of the closeness before I switched jobs.)

I love being able to come home for lunch and spend an hour vegging in front of the compy and being able to eat warm food (if I bother).

How's first day go?
