gnomi, Ima tells me that I absolutely *must* get your pareve (easy) brownie recipe. I am officially requesting it. :)

Yes, I prefer to avoid margarine, though I have a few recipes where it is unavoidable. For those, however, I use a brand of margarine that is both pareve and trans-fat free (not an easy combination to find, by the way). That is what I use for my pareve butternut squash kugel.

I'll give the oil a try with brownies next time I make them.

Here it is, as received from dancingdeer, who is a dear friend:

dancingdeer's Coconut Mint Brownies
Recipe is just a modification of my regular brownie recipe. here goes:
Mix 1/2 C veg. oil, 1 C sugar, 1 tsp vanilla. Add 2 eggs and mix.
Combine 1/2 C flour, 1/3 C cocoa, 1/4 tsp baking powder, 1/4 tsp salt, and mix all together with the wet mix.
Then my "extra" stuff: add 1/2 C shredded coconut, and 1/4 tsp peppermint extract.
Pour into greased 8x8 (or 9x9) baking pan; bake 25 minutes at 350 degrees.


Oh, I also sprinkled about 1/4 cup of mini chocolate chips on top of the batter before it went in the oven.


I frequently make the recipe without the "extra" stuff as just plain chocolate brownies.
